2 small avocados or 1 ½ large avocado
1 small purple onion
2 tablespoons capers
3 tablespoons natural yogurt
Juice of ½ lemon
Salt and pepper to taste1. Cut the onion into very fine cubes, put in a bowl with warm water and 1 teaspoon of salt. Let stand 15 minutes, then wash well with cold water and squeeze.

2. Cut the avocados into cubes and put them in a bowl. Add the onion, then the chopped capers, yogurt and stir. Dress with lemon juice, salt and pepper, taste and if you want you can add a little olive oil. Serve alongside the piping hot empanadas.
